A version of the Mexican classic Chile Relleno. This version is stuffed smoked chicken, fresh corn, black beans and cheese. Wrap the poblano chili in bacon and then smoke it some more. Served over Spanish rice and finished with a creamy aioli. I got it to go and when I opened the paper back I was greeted with some of the best smoky smells ever. The chicken was butter tender. The corn was still crisp and sweet and the beans still firm and some of the smallest black beans I've seen. I doubt these beans came from a can. The rice was good, fluffy and not gooey like Spanish rice sometimes is. The bacon and chili come out blackened but not burnt tasting. I must have eaten it too fast, before I knew it was gone. Synopsis: I would call this one of the top three versions of Chile Relleno I've ever had.
